Over the course of a week, we experimented with foods found around Civitella d’Agliano, a small village in the Italian region of Latium. No cookbooks or other instructions where used – our only guide was our intuition and senses: Appearance, smell, taste and texture. The result was a seven - course meal for fellow students, professors and locals from the village. This was documented in the form of a small cookbook.
